Tasty breakfast pizza that isn't just cold leftovers.
Preheat the oven to 450°F.
In a small skillet, cook 2-3 pieces of bacon or 1 sausage until cooked through; crumble and set aside.
Add a handful of chopped fresh spinach to the drippings in the pan and cook for a minute, until wilted. Set aside.
Place 2 Udi’s Gluten Free pizza crusts on a large baking sheet, spread with 1-2 tbsp tomato sauce, top with bacon or sausage and spinach, and sprinkle with 1/4-1/2 cup grated mozzarella cheese.
Crack 1 large egg into the middle of each pizza and bake for 15 minutes or until the crust is golden, cheese is melted and the egg white is set and the yolk is done to your liking.
