Ingredients

  • 1 lb Only Alberta Beef stewing beef
  • 2 tBSP. chili powder
  • 1 14 oz (398 mL) can crushed tomatoes
  • tortilla chips
  • grated cheese
  • black beans, sliced jalapeños, cilantro, avocado (optional
  • salt and pepper, to taste
  • canola oil, for cooking
  • salsa, for serving

How to Make It

Preheat the oven to 300˚F. In a heavy pot or Dutch oven, heat a drizzle of oil over medium-high heat and brown the meat on all sides, sprinkling with salt and pepper. Stir in the chili powder, tomatoes and half a can of water, cover and transfer to the oven for 2 hours, until very tender. (Alternatively, transfer to a slow cooker and cook on low for 4-6 hours.) 

Spread the tortilla chips in a large cast iron skillet or on a foil-lined baking sheet. Pull the beef apart with two forks and spread over the chips; top with beans, cheese, jalapeños and any other toppings you like and return to the oven for 15 minutes, or until the cheese has melted. Serve with salsa.
