The five spice will give it a little heat and cool it down with honey butter glazed yams

Preheat oven to 365° F.

In a small pot over medium heat, combine honey, butter, lemon juice and thyme leaves.

Bring to a light simmer and remove from heat when butter is fully melted, and the thyme is fragrant.

In a 13” x 9” casserole pan, arrange the rounds of yam so that they are slightly overlapping in a shingled fashion, then drizzle over top the butter mixture.

Season lightly with salt and then wrap container with foil.

Transfer to preheated oven and bake the yams for 30 minutes, covered. Test their doneness intermittently with a skewer.

Remove foil and bake another 10 minutes to allow yams to caramelize.
8.
While the yams are baking, prepare the pork. In a large skillet over medium high-heat, pour a splash of oil.
9.
Sprinkle the loin evenly with the Five Spice blend and salt.
10.
Transfer pork tenderloin to the hot pan and sear evenly on all sides until a nice golden-brown.
11.
Transfer loin to a roasting tray and roast in oven until desired doneness is achieved, approximately 15 minutes for medium-well. An internal thermometer reading should register 160° F.
12.
Remove from heat and allow to rest for about eight minutes.
13.
Slice the pork tenderloin into medallions and serve with the glazed yams on the side.
