How to Make It

1.

Preheat grill on medium high heat.

Generously season lamb burgers with salt and pepper.

Grill for about 5 minutes a side until nicely browned with grill marks and cooked through.

Sprinkle cucumbers with a bit of salt to remove moisture and soften them. Squeeze excess juice out of cucumbers. Set aside until ready to use.

Mix olive oil, chopped mint, lemon zest and salt and pepper together in a bowl. Set aside until ready to use

Toast buns on grill for about 1 minute a side.

7.

To assemble place a teaspoon of hummus on each side of bun, place cucumbers on bottom, then top with lamb burger, tomatoes, feta, then drizzle with flavoured olive oil and top with bun lid.
