Set-up the fryer by putting the oil into a large pot and slowly heat to 375°F.
Mix the chicken wings with soy sauce and corn starch.
In a large bowl, large enough to toss the wings, mix the ginger and green onions together. Add 1 tbsp of the hot fryer oil to “bloom” the ginger.
Now fry the chicken wings in batches, about 4-5 minutes until done.
When finished, put the wings in the ginger bowl, toss and season with salt. Continue until all the wings are fried.
In a sauté pan, place the carrots, butter, orange juice, water, and honey.
Put on a lid and cook for 3 minutes.
Remove the lid and let sauce reduce to a glaze.
Garnish with cilantro and season with salt.
