Grilled Smoked Chicken Sausages and Naan

  • Pickling Liquid
  • 1 1/8 cups white wine vinegar
  • 1/2 cup sugar
  • 1 teaspoon fennel seeds
  • 1 teaspoon black peppercorns
  • 1 large red onion, julienned (matchstick size)
  • Sausage and Naan
  • 4 smoked spinach and feta chicken sausages
  • 4 pieces naan bread
  • 1 cup hummus
  • 4 sprigs mint, torn
  • 2 tablespoons plain greek yogurt

How to Make It

  1. Preheat grill to medium-high heat.

Pickling Liquid

  1. In a small saucepan, bring vinegar, sugar, fennel seeds and peppercorns to a simmer over medium heat. Reduce heat and simmer gently for 10 minutes.
  2. Strain the aromatics from the vinegar and add the onions.
  3. Set aside for at least 15 minutes or up to an hour at room temperature.

Sausages and Naan

  1. Grill the chicken sausages according to package directions for 8 – 10 minutes to an internal temperature of 74° C (165° F).
  2. While the sausages are resting, warm the naan on the grill without charring.
  3. Spread each one evenly with ¼ cup of hummus.
  4. Add sausage, and top with torn mint sprig and ½ tablespoon of Greek yogurt.
  5. Strain onions from pickling liquid and top to taste. Serves four.
