Gruyère / Gouda Gougères

  • 1 cup water
  • 1/2 cup butter, cut into pieces
  • 1/4 tsp salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 1/2 cups coarsely grated Gruyère or aged Gouda cheese

How to Make It

Preheat oven to 375°F and spray two baking sheets with nonstick spray or line them with parchment. In a medium saucepan, bring water and butter to a boil over medium-high heat. Turn the heat down to low and stir in the flour all at once, stirring until the mixture pulls away from side of pan.

Transfer the mixture to a bowl, let cool slightly and beat in the eggs one at a time, beating well after each addition. The batter should have the consistency of thick pudding.

Stir the cheese into the batter and drop spoonfuls an inch apart on the parchment-lined sheets. Bake for 25-30 minutes, or until puffed, golden and crisp.
