Hoisin Pork Lettuce Wraps

  • 1 lb ground pork (or pork loin, cut into 1-inch strips)
  • olive oil, as needed
  • 1 small onion, chopped
  • 1 red pepper, chopped
  • 1 cup mushrooms, chopped
  • 1 tbsp fresh ginger, grated
  • 2-3 garlic cloves, crushed
  • 1/3 cup hoisin sauce
  • lettuce leaves (romaine or butter)

How to Make It

  1. In a large, heavy skillet heat a drizzle of oil over medium-high heat and sauté a small chopped onion and red pepper until soft.
  2. Add 1 lb ground pork or pork loin, cut into 1-inch strips, 1 cup chopped mushrooms, 1 tbsp. grated fresh ginger and 2-3 crushed garlic cloves.
  3. Cook while stirring until the meat is no longer pink and all excess moisture is cooked off.
  4. Add 1/3 cup bottled hoisin sauce and stir to heat through.
  5. To serve: Spoon filling into a small romaine or butter lettuce leaf, wrap and eat.
