Lemon Tarts

Simple lemon tarts are a treat, and can be made quickly with frozen tart shells.

Ingredients

  • 6 - 8 tart shells
  • 3 large egg yolks
  • ½ cup sugar
  • cup lemon juice
  • zest of one lemon
  • ¼ cup butter, cut into pieces
  • fresh berries, for garnish (optional)

How to Make It

1.

Preheat the oven to 375˚F.

Set the tart shells on a baking sheet, poke the bottom of each shell with a fork, and bake for 10-12 minutes, until pale golden.

In a medium saucepan, whisk together the egg yolks, sugar, lemon juice and zest.

Set over medium heat and cook, stirring often (if not constantly) with a whisk, until the mixture comes to a boil and thickens. Remove from the heat and stir in the butter.

If you like, press a fresh berry into the top of each tart before the curd sets.
