In a bowl combine oregano, paprika, garlic and chili powder to make the rub.
Now salt and pepper the short ribs and then dust with the rub.
In a large bowl combine coleslaw, lime zest, lime juice, cilantro, jalapeno and avocado.
Toss well and adjust seasoning with more lime juice, salt and pepper.
In a cast iron pan, heat over medium until starting to smoke.
Add a splash of oil and sear short ribs 2 at a time. About 1-2 minutes per side. You want to sear them quickly so they stay medium to medium rare and don’t become chewy.
When all the short ribs are seared to medium rare, serve with the lime-cilantro coleslaw and enjoy!
