Rub a bottled spice rub all over the surface of your ribs, place on a rimmed baking sheet and cover completely with foil.

Bake at 300°F for 2 to 2 1/2 hours. Remove the foil and slather the ribs generously with barbecue sauce.
3.
Crank up the heat to 400˚F and roast for another half hour, until the meat is very tender. (Alternatively, finish them on the grill—the ribs can be pre-roasted and refrigerated for up to a few days before finishing.)
