Peach Bread Pudding with Salted Caramel

  • 6 day-old Udi's Gluten Free Bread
  • 1-2 sliced peaches
  • 3 large eggs
  • 1/2 cup brown sugar
  • 1 1/2 cups milk
  • 1 tsp apple pie spice or cinnamon
  • 1 cup sugar
  • 1/4 cup water
  • 1/4 tsp lemon juice
  • 1/2 cup heavy whipping cream
  • 1 tbsp butter
  • 1 large pinch of salt

How to Make It

  1. Cut or tear 6 slices day-old Udi’s Gluten Free bread into pieces and place in a large bowl with 1-2 sliced peaches.
  2. Whisk together 3 large eggs, 1/2 cup brown sugar, 1 1/2 cups milk and 2 tbsp melted butter and pour over the bread mixture.
  3. Sprinkle with 1 tsp apple pie spice or cinnamon and toss to coat.
  4. Pour into a 2L baking dish and bake at 350˚F for 45 minutes, or until golden and springy to the touch.
  5. Meanwhile, in a heavy saucepan bring 1 cup sugar, 1/4 cup water and 1/4 tsp lemon juice to a boil over medium-high heat.
  6. Cook, swirling the pan occasionally, until it starts to turn golden.
  7. Then stir in 1/2 cup heavy (whipping) cream and 1 tbsp butter—it will spatter and steam—stir until smooth, then stir in a big pinch of sea salt.
  8. Serve over the bread pudding.
