  • 1 package (16 oz) penne pasta
  • 4 Spolumbo's Turkey Cranberry Sausages, sliced (1/2 inch)
  • 1 tbsp butter
  • 1 can 928 oz) whole plum tomatoes
  • 4 cloves garlic, minced
  • 2 shallots
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/2 tsp sage
  • 1/2 cup vodka
  • 1/2 cup heavy cream
  • 1/2 cup shredded Parmesan cheese
  • Handful of fresh basil leaves

How to make it

  1. Cook pasta according to package instructions.
  2. In a large skillet melt butter over medium heat, add the sliced turkey sausage and brown for 2 minutes on each side. Add the sage and shallots, cook until tender around 3 minutes. Add the garlic and red pepper flakes, stirring for 30 seconds.
  3. Remove from heat and stir in the vodka, tomatoes and salt. Return skillet to heat and simmer, stirring often, until the alcohol cooks off, about 7 minutes.
  4. Stir in heavy cream and cook until sauce thickens slightly, about 3 minutes.
  5. Take off heat and stir in the parmesan and basil. Toss the penne in the sauce and serve. Garnish with additional Parmesan to taste.
