Pre-heat oven to 350 °F.
In a bowl, combine cumin, paprika, garlic powder and chili powder.
Place the meat loaf in a muffin pan and then create a divot in the middle of the meatloaf with your finger.
Roll the cheese stick in the spice mix (there should be lots leftover) and place cheese into the divot.
Cover cheese with a little of the meatloaf so it is in the center of the meatloaf.
Toss potatoes in oil and season with salt and the remaining spice blend.
Place in an oven proof pan.
Place the meatloaf and potatoes in oven and cook for 25-35 minutes, until meatloaf reaches 155 °F and the potatoes are tender.
Remove stuffed meatloaf from the oven and garnish with chopped cilantro.
Enjoy with the baked potatoes.
