Pork Satay

These pork skewers are great for dinner or as a party food to please everyone’s taste buds.

  • 2 lb pork cutlets
  • 1/4 cup orange juice
  • 1/4 cup soy sauce
  • 2 tbsp lime or lemon juice
  • 1 tbsp packed brown sugar or honey
  • 1 tbsp grated fresh ginger
  • 3 cloves garlic, crushed
  • 1 tsp curry powder and/or 1/2 tsp ground cumin
  • 2 green onions, chopped (optional)

How to Make It

  1. Combine everything but the pork in a medium bowl.
  2. Cut the pork cutlets lengthwise into strips and add to the marinade, stirring well to coat. Cover and refrigerate for 2 hours or overnight, or freeze for up to 6 months.
  3. Soak bamboo skewers in the water while the pork is marinating.
  4. Thread strips of pork onto the skewers and grill or broil for about 3 minutes per side, just until cooked through.
  5. Serve hot, warm or cold with peanut sauce for dipping.
