Power Waffles

Power Waffles

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 1/4 cup ground flax seed
  • 2 tsp baking powder
  • 1 cup milk
  • 1 cup plain yogurt
  • 2 eggs
  • 2 tbsp canola or mild olive oil
  • 1 mashed very ripe banana
  • pinch salt

How to Make It

  1. In a large bowl, whisk together 1 cup each all-purpose and whole- wheat flour, 1/4 cup ground flaxseed, 2 tsp baking powder and a pinch of salt.
  2. In another bowl, whisk together 1 cup each milk and plain yogurt, 2 eggs, 2 tbsp canola or mild olive oil and, if you like, 1 mashed, very ripe banana.
  3. Add to the dry ingredients, stirring just until combined, and cook on a preheated waffle iron until golden.
