Roasted Potato Poutine

Ingredients

  • 1 lb new potatoes
  • 250 g cheese curds (or 1 small bag)
  • canola or olive oil, for cooking
  • salt, to taste
  • gravy (leftovers work well)

How to Make It

Preheat the oven to 425˚F. Spread the potatoes out in a single layer on a rimmed baking sheet, drizzle with oil and roll them around on the pan to coat. Sprinkle with salt and roast for 20-30 minutes, or until tender and turning golden.

Transfer to a shallow bowl or serving dish and top with cheese curds and warm gravy. Serve immediately.
