Ingredients

  • 1 cup Olivieri linguine nested pasta
  • ½ cup Calgary Co-op roasted chicken, shredded
  • ¼ cup corn kernels
  • ¼ cup bell pepper, diced
  • ¼ cup red onion, diced
  • ¼ cup tomato, diced
  • ¼ cup black beans, canned, rinse
  • 2 each garlic, chopped
  • 1 Tbsp. chili powder
  • ¼ tsp. cumin powder
  • ¼ tsp. oregano, dried
  • 3 Tsbp. oil
  • 6 cups chicken stock
  • tt cayenne
  • tt Tabasco
  • Salt and Pepper
  • cilantro leaves
  • avocado dice

How to Make It

1.

In a large stock pot heat oil over medium-high heat.

When oil is hot, add the onions and garlic.

3.

Cook for 2 minutes and then add bell peppers and cook for 2 minutes.

Add the spices – chili powder, cumin, oregano – and toast in pan.

5.

Add the chicken stock and bring to a simmer.

6.

Once stock is at a simmer add the corn and the tomato and cook for 15 minutes to let all the flavours combine.

7.

Add the black beans, roasted chicken, and pasta and cook for 1-2 minutes to heat through.

8.

Adjust the seasoning with cayenne, tabasco, salt and pepper.

9.

Dish soup into each bowl and garnish with avocado dice and cilantro leaves.
