Toss 2 cups whole (skin on) almonds with 1 tbsp each sugar, canola or olive oil and honey or maple syrup.

Add 1/2 tsp coarse salt, 1/2 tsp cumin, 1/4 tsp cinnamon, 1/4 tsp freshly ground black pepper and a couple drops of hot sauce (or any combination of salt and spices you like).

Spread out in a single layer on a rimmed baking sheet and bake at 325˚F for 20 minutes, stirring once or twice, until golden.

Let cool completely before packaging in snack-sized Zip-lock bags.
