How to Make It

1.

In large bowl, whisk together flour, cornmeal, baking powder, baking soda and salt.

In another bowl, whisk together the eggs, buttermilk and oil; pour over the dry ingredients and whisk just until blended.

3.

Preheat your waffle iron and brush it with some oil or spray it with nonstick spray.

4.

Pour in about 3/4 cup batter and lay a strip or two of bacon overtop; cook according to the manufacturer's directions, or until the waffle is golden and crisp.

5.

Serve topped with extra chopped bacon, if you like.
