In a medium pan heat 2 tbsp of oil over medium-high. When the oil is hot add the chicken and cook until it starts to brown. Now add the onions and cook until onions are tender and chicken is cooked through, about 10 minutes.
In a large pot add fry oil until about 1.5” is in the bottom of the pan. Heat on medium-high until about 350 °F.
While the oil is heating, combine the ground chicken, chili powder, cumin, paprika, garlic, sour cream, cheese and ¼ cup of salsa. Mix well and adjust the seasoning.
Now spread a few tablespoons of the chicken mixture onto the tortillas. Roll and carefully set seam side down into the hot oil using tongs.
Cook until golden and repeat until all the tortillas are fried. Drain on a paper towel.
