In a small bowl, combine chili powder, cumin, paprika, onion powder, garlic powder, oregano and cayenne.
Now coat the chuck paddies/wieners with oil and then dust with the spice mixture.
Place chuck paddies/wieners on the grill, cook through and remove from grill.
Now it’s time to assemble the gorditas. In the middle of the tortilla place a smear of sour cream, now add the chuck paddy/wiener. On top of the chuck paddy/wiener put a handful of shredded lettuce. Now add the cheese. To close the gordita and make the square shape, fold the top of the tortilla down, then the right side, followed by the bottom of the tortilla. Now put a little more cheese, this will help keep the tortilla closed. Finish the square by folding in the left side of the tortilla. Repeat for each gordita.
Place gorditas on the grill, folded sides down, to warm tortilla and to melt the cheese. Flip and grill other side. Remove from the grill, serve with your favorite hot sauce and Co-op Mexican Street Corn Salad.
