Ingredients

  • 6 6 oz pieces halibut fillets (skin removed)
  • 1 lemon ( cut into 12 thin slices)
  • 2 Tbsp. extra virgin olive oil
  • 4 sprigs thyme
  • 4 pieces parchment paper (15X24-inch)
  • 1 pint cherry tomatoes
  • ¼ cup kalamata olives (pitted)
  • 1 cup Cal & Gary's steamer bag green beens
  • 4 bay leaves
  • salt and pepper
  • 2 Tbsp. almonds

How to Make It

1.

Preheat oven to 350 °F

Steam green beans in steamer pack in a microwave according to package instructions.

On parchment paper line 3 pieces of lemon in center of sheet, then place halibut filet on top. Repeat 4 times with the rest of the parchment paper, lemons and halibut.

Divide the tomatoes, olives, and green beans, evenly amongst the parchment paper and halibut.

Drizzle olive oil over top and season generously with salt and pepper. Top each piece of halibut with bay leaf and thyme sprig.

Fold the parchment paper over the halibut and the vegetables, and fold the edges over itself in small pleats to seal.

7.

Transfer the papillotes to a baking sheet and bake for 15 minutes in the pre heated oven.

8.

While fish is cooking in the oven toast almonds in pan over medium high heat until fragrant and golden. Pulse in food processor until coarsely ground.

9.

Remove fish from oven and cut open parchment paper with scissors, remove thyme and bay leaf and then sprinkle almonds over top. Serve in parchment paper.
