All kinds of veggie spaghetti can be combined to make a tasty slaw—if you like, finely shred some cabbage to add to the mix.

Whisk together the ingredients in a small bowl or measuring cup, adding hot water (or coconut milk) to thin to your desired consistency.
Drizzle over your choice of veggie spaghetti and thinly sliced peppers, tossing to coat.
Serve sprinkled with cilantro and chopped almonds or peanuts. Serves as many as you like.
