Make It Tonight: Beef Kabobs

Kabobs are delicious, don’t have to be expensive, and are easy to make. What more could you want in a meal?  

The first reason you should love kabobs is simply because they are fun! Mixing and matching meat and veg of your choice is always great, and testing out new combinations might just help you find your new favorite kabobs. Better yet, kabobs are also budget-friendly, since you can get vegetables or meats that are on sale and make your own, threading these cubes onto skewers or sticks. 

Better yet, you can get pre-made kabobs from your local Co-op store. Co-op’s pre-made kabobs are designed to be a quick and easy weeknight meal. Just unwrap, and place on a hot grill. 

While you have the grill hot, we highly recommend grilling up some fresh fruits as well. Purchasing pre-cut fruit such as pineapple, or picking up a bag of stone fruits can supply you with a fresh and healthy dessert option. Just thread fruits onto skewers, and grill until they get some colour and light caramelization. Then use them as a topping on ice cream, or create a delicious galette by laying a thawed frozen pie crust on a parchment lined pan, sprinkling it with fruit, sugar and spices, and wrapping  the edges over the filling to create an open, plate-less pie.

Kabobs don’t take long to cook and there is basically no cleanup. This is great if you’re busy, of course, but also makes the kabob-eating experience more enjoyable because you know you won't be scrubbing lots of bowls and utensils afterwards.  

A very common question regarding kabobs is exactly how hot the grill should be. You can put your kabobs on the grill at 400°F (204°C). Be sure to stay at the grill to monitor and flip - anything that seems to be cooking faster can be moved to a cooler area or indirect heat. 

Kabobs are the ultimate Make It Tonight meal, because they’re so versatile. You can cook them up fast, make a stack of them for a big feast, or modify some ingredients to make them kid friendly.

Grilled Beef & Fruit Kabobs with Balsamic Reduction

Ingredients:

Wk36 Beef kabob blog4-6 Petit Tender Beef Kabobs with Vegetables
4-6 Cal & Gary’s Fruit Kabobs
½ cup balsamic vinegar
3 tbsp sugar
2 tbsp Farmers & Founders soy sauce  
¼ cup Paradise Hill Farms fresh basil, sliced thin
Salt & pepper

Directions:

Preheat grill on medium to medium-high.

In a pot combine balsamic vinegar and sugar. Put on medium-low heat until reduced to a glaze. About 8-10 minutes.

Toss the beef kabobs with soy sauce and season with pepper.

Place all the kabobs onto the grill. Cook the beef kabobs for about 7-8 minutes and the fruit kabobs for 3-4 minutes until they get nice grill marks. Make sure to rotate the kabobs so they cook evenly.

Remove the kabobs from the grill, drizzle with the balsamic reduction and sprinkle with fresh basil. Enjoy!
